Prepare the Filling: In a large bowl, whisk pudding mix and milk until thick. In another bowl, whip heavy cream, powdered sugar, and vanilla until stiff peaks form. Fold whipped cream into pudding.

Layer the Cake: In a 9×13 dish, place a single layer of graham crackers. Spread half the pudding mixture over the crackers. Repeat layers, ending with graham crackers on top.

Make the Ganache: Heat 1/2 cup heavy cream until simmering. Pour over chocolate chips, let sit for 1 minute, then stir until smooth. Spread ganache over the top layer of graham crackers.
