  • 2 teaspoons gelatin (optional, for firmness)

For the Strawberry Topping:

  • 2 cups fresh strawberries, sliced
  • ¼ cup sugar
  • 1 tablespoon lemon juice

Instructions

Step 1: Prepare the Crunchy Base

  1. Crush the biscuits into fine crumbs and mix with melted butter and sugar.
  2. Press the mixture firmly into a 9-inch springform pan.
  3. Chill in the refrigerator for at least 30 minutes.

Step 2: Make the Cheesecake Filling

  1. Beat the softened cream cheese and sugar until smooth.
  2. Add vanilla extract and lemon juice, mixing well.
  3. In a separate bowl, whip the heavy cream until soft peaks form, then fold into the cream cheese mixture.
  4. If using gelatin, dissolve it in warm water and mix it in for extra firmness.
  5. Pour the filling over the chilled crust and smooth the top.

Step 3: Prepare the Strawberry Topping

  1. In a saucepan, heat strawberries, sugar, and lemon juice over medium heat for 5 minutes until soft.
  2. Allow the compote to cool, then spread it over the cheesecake.
