- 2 teaspoons vanilla extract
- 1 tablespoon lemon juice
- 2 teaspoons gelatin (optional, for firmness)
For the Strawberry Topping:
- 2 cups fresh strawberries, sliced
- ¼ cup sugar
- 1 tablespoon lemon juice
Instructions
Step 1: Prepare the Crunchy Base
- Crush the biscuits into fine crumbs and mix with melted butter and sugar.
- Press the mixture firmly into a 9-inch springform pan.
- Chill in the refrigerator for at least 30 minutes.
Step 2: Make the Cheesecake Filling
- Beat the softened cream cheese and sugar until smooth.
- Add vanilla extract and lemon juice, mixing well.
- In a separate bowl, whip the heavy cream until soft peaks form, then fold into the cream cheese mixture.
- If using gelatin, dissolve it in warm water and mix it in for extra firmness.
- Pour the filling over the chilled crust and smooth the top.
Step 3: Prepare the Strawberry Topping
- In a saucepan, heat strawberries, sugar, and lemon juice over medium heat for 5 minutes until soft.
- Allow the compote to cool, then spread it over the cheesecake.
Step 4: Chill & Serve
- Refrigerate the cheesecake for at least 5 hours (or overnight) before serving.
- Garnish with fresh strawberries or crushed nuts for extra crunch.

- Use frozen strawberries if fresh ones aren’t available (just drain excess liquid).
