Creamy no-bake cheesecake balls infused with raspberry flavor, coated in smooth white chocolate. Perfect for parties, gifts, or a sweet treat!
Ingredients
-
8 oz (225g) cream cheese, softened
-
1 ½ cups (150g) graham cracker crumbs
-
½ cup (60g) powdered sugar
-
1 tsp vanilla extract
-
2-3 tbsp raspberry jam or 1 tsp raspberry extract
-
8 oz (225g) white chocolate, melted
- Optional: Freeze-dried raspberries, crushed nuts, or sprinkles for garnish
Instructions
-
Prepare the Filling: In a large bowl, beat the cream cheese until smooth. Add powdered sugar, graham cracker crumbs, and vanilla extract. Mix until well combined.
-
Add Raspberry Flavor: Fold in raspberry jam or extract until evenly distributed. Taste and adjust sweetness or flavor as needed.
-
Shape the Balls: Scoop tablespoon-sized portions of the mixture and roll into balls. Place on a parchment-lined tray and chill in the fridge for 1-2 hours.
-
Coat with Chocolate: Melt white chocolate in a double boiler or microwave. Dip each chilled ball into the chocolate, ensuring it’s fully coated. Place back on the tray.
-
Garnish: While the chocolate is still wet, sprinkle with freeze-dried raspberries, crushed nuts, or sprinkles if desired.
-
Set: Allow the chocolate to harden at room temperature or in the fridge for 15-20 minutes. Serve chilled.
Notes
-
For a firmer texture, freeze the balls for 20 minutes before dipping in chocolate.
-
Store in an airtight container in the fridge for up to 1 week or freeze for up to 2 months.
-
Use high-quality white chocolate for the best results.
