Ingredients

4 salmon fillets (6 oz each)

2 tbsp olive oil

Salt and pepper, to taste

4 tbsp unsalted butter

4 garlic cloves, minced

1 cup heavy cream

4 cups fresh spinach

1/4 tsp nutmeg (optional)
- Fresh parsley or dill, for garnish
Instructions

Preheat oven to 375°F (190°C).

Season salmon with salt, pepper, and olive oil. Set aside.

Make garlic butter sauce: Melt butter in a pan, add garlic, and sauté until fragrant (1-2 minutes). Remove from heat.

Cook spinach: In the same pan, wilt spinach, then add cream and nutmeg. Simmer until thickened. Season with salt and pepper.

Assemble: Place salmon in a baking dish, pour garlic butter sauce over it, and spoon creamed spinach around the fillets.

Bake: Bake for 12-15 minutes, or until salmon is cooked through.
