Description

Ingredients

  • 4 salmon fillets (6 oz each)

  • 2 tbsp olive oil

  • Salt and pepper, to taste

  • 4 tbsp unsalted butter

  • 4 garlic cloves, minced

  • 1 cup heavy cream

  • 4 cups fresh spinach

  • 1/4 tsp nutmeg (optional)

  • Fresh parsley or dill, for garnish

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Season salmon with salt, pepper, and olive oil. Set aside.

  3. Make garlic butter sauce: Melt butter in a pan, add garlic, and sauté until fragrant (1-2 minutes). Remove from heat.

  4. Cook spinach: In the same pan, wilt spinach, then add cream and nutmeg. Simmer until thickened. Season with salt and pepper.

  5. Assemble: Place salmon in a baking dish, pour garlic butter sauce over it, and spoon creamed spinach around the fillets.

  6. Bake: Bake for 12-15 minutes, or until salmon is cooked through.

  7. Garnish with fresh parsley or dill and serve immediately.

Notes

  • Use wild-caught salmon for the best flavor.

  • For a lighter version, substitute heavy cream with half-and-half or coconut milk.
